Apple Beet Bounty
APPLE BEET BOUNTY
Serves 2

Ingredients
  • 2 small/medium beets, scrubbed
  • 2 apples, cored and cubed, sliced or shredded, as you prefer
  • 1 fennel bulb diced small or shredded
  • 2 teaspoons fennel seeds
  • 2 handfuls pumpkin or sunflower seed
  • 1 hearty tablespoon of ghee
  • 1 pinch pink salt & 1 pinch black pepper
  • 1 handful mint leaves, minced
Dressing
  • 1/4 cup orange/lime/lemon juice
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon fresh ground coriander
  • fresh cracked black pepper
  • Honey & Salt to taste & Blend together
Instructions
*Option to shred the beets and eat raw - best for Pitta/Kapha. For Vata roast the beets.
  1. Preheat your oven to 400F. Line the bottom of a baking tray with parchment paper. 
  2. Add a dollop of ghee and place in the oven for a couple of minutes to melt the ghee (option to toss beets in oil instead)
  3. Cut the stems and tails off the beets, and dice for roasting or shred for raw.
  4. Pull the baking tray from the oven. Place the beets in the tray, sprinkle with salt and pepper and roll around to cover in ghee. Put in the oven and roast for 30 minutes or until beets and garlic are cooked through, stirring often.
  5. Meanwhile, slice/shred the apples and place in a salad serving bowl. 
  6. Toast your pumpkin and fennel seeds in a dry pan over medium heat. Give the pan a few good swirls and shakes to brown evenly. As soon as the seeds begin to pop turn off the heat. Leave the pan for a moment to allow the seeds to continue to roast.
  7. Once the beets are cooled slightly, dice the beets. 
  8. Toss the beets, apple, & fennel. Drizzle the dressing over the salad. Sprinkle with seeds, and mint, and enjoy!

    Dosha Modifications
    This recipe is balanced for the season, and generally when we are in good health eating seasonally is all we need for optimal balance, energy and wellness. However, if you have a doshic imbalance then you can try these suggestions to reduce or at least not aggravate that dosha. 

Vata: Serve with lightly sautéed greens or roasted carrots, and consider roasting the beets. When toasting the seeds, add a small handful of chopped hazelnuts or walnuts and/or avocado.
Pitta: Add more mint and add cilantro and optionally cubed avocado. If Pitta is high, lime juice is better than orange juice.
Kapha: Replace orange juice with grapefruit juice.
